Christmas Recipes: Main Dishes. No.11 of 12 - Glazed Pork with Fig Stuffing

Christmas recipe ingredients:
- loin of pork, boned with skin scored, 1.4 kg (3 lb)
- salt and pepper
- honey, clear 60 ml (4 tbsp)
- mustard powder, 10 ml (2 tsp)
- lemon, grated rind from 1
- garnish, sprigs of rosemary and a few figs
stuffing:
- shallots, 4
- garlic clove, 1
- figs, dried no-soak 225 g (8 oz)
- apple, eating 1
- rosemary, fresh sprigs 2
- butter, 50 g (2 oz)
- lemon, grated rind and juice from 1
- dry sherry, 45 ml (3 tbsp)
Christmas recipe instructions:
- Stuffing preparation: Chopped rosemary, peeled/cored/chopped apple, choppee figs, peeled and crushed garlic, peeled and chopped shallots.
- Cook the garlic and shallots in butter until golden brown. Add the sherry, lemon rind and juice, rosemary, apple and figs. Stir until softened and most of the liquid reduced.
- Place the cooled stuffing from step 2 along the middle of the salt and pepper seasoned pork loin (skin side down). Roll the piece up and tie up with string at several locations. Cook for 1 hour at gas mark 5 (190 degrees centigrade, 375 F).
- Near the end of this time, heat together the lemon rind, mustard and honey. After the hour is up, brush this onto the pork and continue the cooking for another 45 minutes, basting every 15 minutes.
- Serve as carved slices (thick), garnished with rosemary sprigs and a few figs.
Heating and serving tips:
- Don’t keep food hot for longer than an hour before serving
- Leave roast potatoes open to the atmosphere after cooking, to retain their crispness.
- Remember that it is harder to keep certain foods warm. e.g. root vegetable keep their heat well but spinach and cabbage don’t.

The regional cuisines of Chinese cooking (Part 1 of 4)

With China covering the immense land within its boundaries, it is no surprise that there are many regional variations in Chinese cuisine. Traditionally, Chinese cooking is divided into five styles of regional cuisines. It is headed by the 3 great schools of Peking to the north, Szechuan to the west, and Chekiang-Kiangsu to the east. Fukien and Canton, of lesser importance cover the southern region.
Peking: the northern cuisine
The northern China presents a great contrast to the rest of the country. The North China Plain, edged by mountains to the north, stretches away in the west to the borders of Inner Mongolia, and is crossed by the infamous Yellow River . Due to its location, the climate is harsh for much of the year. The spring is dry and dusty, the summer is hot and wet, and the fall is calm, dry, and sunny, while the winter is long and freezing cold. It is dramatically subject to drought from the failure of the late spring rains and to flood when the Yellow River, for centuries unstable in its bed, floods over into the low-lying countryside. Thus, the lives and diets of the people living in this region are dictated by these seasons.
Wheat is the staple food, as opposed to rice in the rest of China, due to the harsh climate making it unsuitable to grow rice. Wheat flour is used to make dumplings, breads, steamed buns, noodles and large Chinese biscuits/pancakes. Meat is much more of a luxury up here, mostly eaten during festival times. Mutton and lamb are popular, most likely due to the influence of the neighboring Mongolians. Most northern family meals are dominated by vegetable dishes for economical reasons. Chinese cabbage is the most popular vegetable, as it is most suited to be stored over the winter. Dishes in general are much more plain, solid and nourishing. Soy sauce is used very generously. The use of leeks, onions, garlic, salted and pickled vegetables such as turnips, white radish and cabbages are important items in a rather monotonous diet.
Peking, which lies to the northern corner of the region, has been the capital of China since the 15th century. It is the land of fried bean curd (tofu) and water chestnuts. With it being the capital, and the city of the emperor’s residence, it is the only area in the region where the availability and the variety of food is abundant. The Imperial chefs were compensated handsomely, and along with the large, wealthy market in the capital, the infusion of gourmet chefs from all over China brought about a great concentration of culinary expertise in Peking . This tradition is what characterizes Peking cuisine today, which is lighter and more elegant than that of the outlying regions. The greatest delicacy of the region is, of course, the elaborate, world-renowned dish Peking duck. In Peking, ducks are specially bred for this dish and force fed to just the right degree of plumpness and tenderness in preparation for this dish.

cost verses actual cash value is the next consideration. These
are the two methods that insurance companies use to settle
claims. The actual cash value method will rebuild your dwelling
or replace your property by taking the replacement value and
subtracting the depreciation. Replacement Cost will replace your
dwelling or personal property with material of like kind and
quality without depreciation.
Maintaining an Aerobic Exercise Program
Any kind of physical movement requires ENERGY. The exercise that uses the most energy is “aerobic exercise”. The term aerobic actually is derived from the Greek word meaning “with oxygen”.
Popular forms of aerobic exercise include jogging, brisk walking, swimming, biking, cross country skiing, and aerobic dancing. Aerobic exercise uses the body’s large muscle groups in a continuous, rhythmic and sustained movement and requires using oxygen for the production of energy.
When oxygen is combined with food (the stored fat in your body’s cells) energy is produced. The longer that you move aerobically, the more energy is needed and the more calories are used.
Regular aerobic exercise will improve your cardio-respiratory endurance. This is the ability of your heart, lungs and blood vessels to produce energy. Plus you will also build up your muscular endurance.
When you engage in a regular program of exercise you will build a healthier body and you will lose excess body fat because you will be using up the stored fat in your body cells.
Never begin an exercise program until you have consulted with your doctor about what kinds of exercise will be beneficial for you, and once you begin, maintain your exercise program.
A good recommendation is some form of aerobic exercise at least three times a week for a minimum of 20 continuous minutes. If that is too much, simply start with a shorter time span and build up to that level. If you need to lose a large amount of weight, you will want to build up to a 30 minute workout five times a week or even daily.

I Need Real Visitors, NOT Search Spiders!
The answer to the first question is simple, the difference between spiders and visitors is dollars. Good old fashion sales, cha ching! ring the cash register. Without quality visitors all of your SEO, website analysis, and keyword ranking nightmares, not to mention the 1000’s of hours you spent changing and tweaking the look of you website, everything, was a waste of your precious time.
Don’t get me wrong, you do want the spiders to visit your website and without all the work mentioned above they wouldn’t stay very long or come back. But remember search spiders are very, very small and hopped up on caffeine go pills. They are faster than an F-16 and make more stops in one hour than Santa does on Christmas Eve. They have no time to stop and shop. Even if they did where would they carry the plastic? They don’t have any pockets or purses to carry a wallet. Their only job is to take a quick look at your site and split to the next URL in the queue. They are mindless robots with one mission.
Secondly, Even if you do your SEO job as good or better than 95% of the webmasters out there you still aren’t going to make the first page! Figure it out, do the math. Between Google, MSN & Yahoo there are only 30 first page spots per given keyword or phrase. That’s out of what? 6 quad trillion pages! The shear size of the web spun by these spiders is staggering! MSN alone reported today it has 6 billion pages of data in there “three month old” search index. Add to that Google, Yahoo and AOL and, well you get the picture. For you or me to get to the first page is almost impossible. Can you change the way things are? No Way baby, it isn’t a reflection on your optimization work it’s just the way it is.
To quote a true expert in the field, Dean Philips
“. . . Because when you stop to consider that Google, DMOZ and Yahoo! have millions and millions of pages in their directories, you’d really have a better chance of winning the lottery, than getting high enough in the results pages where it’s going to make a significant difference in your traffic.”
The answer to the second question, “How do I get more visitors to my website?” is a little harder to give a definitive answer to. There are as many opinions available as there are SEO websites and so called “Experts”. But the bottom line is there are ways.
You have the tools, use them
If you are a website owner and/or you have a good webmaster you have the tools at your disposal already. Most people would think that link exchanging is one way but it’s as old and worn out as that pair tennis shoes you have stuffed under your bed that your wife has been telling you to throw away. Paying for banner ads on other “same type content” websites will work to some extent but the best website choices are usually your direct competitors and giving them your hard earned money makes no sense at all. Google AdSense blocks seem to be on everyone website maybe that will work to bring in some income. Maybe, but it doesn’t move your stock off the shelves and it won’t pay your employees or truck payment. Lastly, you could try Google AdWords advertising, I know first hand that it works to bring in traffic. But watch out, if you don’t manage it right it will get expensive quick.
Heard enough? All of those ideas at one time or another were very good and a couple still work if used sparingly in conjunction with a good overall marketing plan. The spiders have spun this web so big and so tight that if you don’t have a good marketing plan you will get stuck and lost. You simply just have to have a plan and find alternative ways to attract real traffic to your website. More traffic will turn into more sales and that is what we all need.
If you have been looking around the web for an SEO expert to help you bail the water out of your leaky dingy I am sure you’ve noticed the same trends I did. Virtually everyone, not all but close, has taken the Lemming approach to there SEO work, “Follow Google”. First its “we need to fill your meta tags with crap” then its “you need a Reciprocal links index” no wait “now you need only one way links” Enough already. That’s fine for the big corporations, they have huge advertising budgets and enough bank to finance $10,000 per month, go in every direction optimization projects. That’s fine for those SEO firms that currently have these big bucks corporate clients under contract. What about you and me? How do we get our fair share of the visitors and give us a fighting chance to make a living?
The answer is “Forget everything you’ve read and go back to what you know!”
The reason you got into your business in the first place was because you had a product that you knew a lot about and had good success selling it to the neighborhood. In fact, before you mortgaged your house and spent your kids’ first year of college tuition to get involved in the WWW you knew EVERYTHING about that product. You were the Guru, the expert. I’ve got news for you friend, you still are. No matter what Google says.
Now all we have to do is prove it. I say we because from this point forward we’re partners. You’re still in charge, you still pay all the bills and spend all the profits, but together we are going to get the word out about your great website.
That’s great Michael, but how?
With a great overall marketing plan using today’s SEO techniques coupled with the old school marketing that you used for so many years. Add that together with a few new ideas and we will be back on top in a few short months.
First off you need Content! Anyone who has known me for long knows that I believe Content is King. Even if you are a product sales website with 1000’s of sku’s you still need good solid content to bring your customers in and keep them on your site. Long enough to hear about your products and see your great prices. In fact if you have half that many products the content articles are the most important part of the equation. Content holds the key to breaking free of the cocoon and making the spiders pay attention to your website again. So many good things can be said about content that I hardly know where to start.
Well written product articles, featured reviews, test drives, product comparisons, almost any written content will give you untold opportunities to flood the spiders data bank with keywords and phrases. Not just 10 words or 30 words but hundreds of keywords and phrases. Articles will help educate your customers before they buy saving your customer service reps countless hours. These educated customers will come back and tell their friends about your great site. Other webmasters will hear about your website resulting in links and possible affiliates. The benefits are endless.
Discussion boards used to be the big thing. Now, unless you have a tremendous amount of traffic they aren’t worth the time it takes to maintain. Blogs or weblogs on the other hand are reasonably new and easy to maintain and a great way to pass on information to your prospective customers and the search engines love them. In fact if you start one, your product weblog may be the first of its kind, I don’t think I have ever seen a blog about widgets?
The point is you have the knowledge to make this work. You don’t need someone to do all the work you. Like Santa you just need a good helper. If you are not a good writer then practice or hire someone who is. If you need help getting this project started give me a call. Just do it!

Join a Mountain Bike Club For Fun, Fitness and Weight Loss
Mountain biking is not all about the extreme, white knuckle shenanigans you see on TV. There is a sector of the mountain biking community who love a good climb, a good view, and meeting new riders. Even if you have never ridden a mountain bike before there is probably a trail near you that is perfect for your level of riding. Trails range anywhere from rugged single track, to fire roads, to old railroad beds. Mountain biking is a great way to meet new people, gain a new skill, enjoy the outdoors, get in shape, and lose weight.
Step number 1. Go to your local bike shop and let them know you are interested in beginning mountain biking. See if you can arrange a bike rental and ask them if they can put you in touch with a local club that caters to new riders. Once you come in contact with someone from the club - be clear to them about your level of fitness and riding skills. Most clubs have a “no rider dropped” policy but you certainly don’t want to go out with extreme riders just yet. Enjoy your first ride and quit before you want to quit. You don’t want to overdo it on your first ride.
Step number 2. Get to know the folks at your local bike shop and they will put you on the bike that is right for you. Plan on purchasing a bike, helmet, water bottles, some clothing, and possibly a bike rack for your vehicle. The cost of all of this is minimal compared to the hours of enjoyment, scenic views, and fitness you will gain.
Step number 3. Get active in your mountain bike club. Start networking with other riders and find out when the club rides are. There may be a weekly ride that fits perfectly with your schedule or you may meet riders who work the same schedule as you who are looking for people to ride with.
Step number 4. Ride your bike! Have fun, meet new people, enjoy the views, get in shape, lose weight, and make friends for life.

Check Google. I did a search on Google for “mountain bike club” and received 144,000 results. Try (mountain bike club + your town) in Google and you will surely find something.
Your local bike shop. Your local bike shop knows all the riders and all of the clubs. Get to know them. They want your business and they love new riders.
If you can’t find a club - Start one. Work through your local bike shop, place brochures, and run free classifieds. You undoubtedly will get some interested people.
Of course you need to check with your doctor before beginning any exercise program. Learn the rules of mountain biking and stay with riders who will be patient with you. Get in shape, lose weight, and have fun!

Faster Payments For Distributors - Digitize Hard Copy, Proof of Delivery Documents
Each day, a typical distributor ships hundreds of products to its customers. For each delivery, tow copies of the receipt are provided - one is left with the customer, while the second, a “proof of delivery” copy, is signed by the recipient and retained by the driver.
In some cases, at the delivery point, shipment notations are handwritten on the document and include corrections of quality, condition of goods, the printed name of the recipient’s phone number and department.
The document is then returned to the distributor’s office for filing, and oftentimes, filed manually. So far, so good.
But, then a couple of weeks pass and the invoice for goods comes due. Curiously, it remains unpaid-prompting the credit department to call the customer for payment. The customer disputes the invoice, claiming that payment will not be made until a proof of delivery is provided.
So, the distributor hunts down the signed proof of delivery document and provides it to the customer. Days later, the customer remits on the invoice. All’s well that ends well, right? Wrong. If the distributor is cash starved, the DSO is affected by these disputed sums. Often, lines of credit are hampered and the rates distributors pay for credit lines increase.
But what if the proof of delivery document hadn’t been located? What if it has been misfiled, lost, or damaged? These things do happen occasionally, and when they do it can negatively affect average days outstanding - and the bottom line.
There is a better way.
Unstructured documents (that is documents that are not generated from a billing and inventory management system) or documents that are hand modified once generated from a billing and inventory system pose a great challenge for control and management.
Proof of delivery receipts, signed sales tax forms, customer purchase orders, customer fax releases/orders, customer-provided specifications, and request for quotation are critical documents in the distribution trade.
Digitizing these hard copy documents - via multifunction devices that automatically scan and convert documents- can save an organization time, reduce losses, improve productivity and speed cash flow.
For example, delivery personnel returning from a route can scan proof of delivery documents into a multifunction document processing system that routes the paperwork to a designated folder. A document imaging system can post process the file, capture the shipping document number, shipping date, invoice number, and customer purchase order seconds after the document is routed. Once processed, the entire organization has access to the documents.
Digitized proof of delivery documents can then be stored in a network folder and indexed by the distributor’s invoice number. In advanced implementations, proof of delivery can be forwarded to a client with a matched invoice and a copy of their purchase order, completing the three-way payment approval match.
All hard copy documents can be captured and tied to a specific transaction. Systems are available that can be implemented to capture documents relating to title to goods and group them in a searchable document library. These systems track documents at the point of print. A database captures and catalogs document content. Once printed, cycled, and scanned, documents are captured and combined electronically with other non-structured documents. All valuable working papers can then be organized by customer, supplier and employee.
Incoming faxes can also be captured, organized and automatically processed as part of the strategy. Faxed orders can be routed to different departments simultaneously-to sales, customer service, and credit - enabling faster shipments and improved business controls for distributors.
A decade ago, systems that processed documents were not practical for small-to-midsize distributors - but today’s technologies make it possible for virtually any size distributorship. For under $4000, two strategies can be readily deployed: the capture of proof of delivery copies and the automation of inbound faxes.

How Do We Then Live?

I was fortunate enough to fly to Atlanta over the weekend with my daughter, Cristina, who is eleven, to attend the wedding of my former choir director from Miami. (The very one who took our choir to perform in Carnegie Hall.) We were both so excited we could hardly sleep the night before. The thought of seeing all of our old Miami friendsas well as a dear family from Kentucky who had since relocated to Atlantawas almost more than we could bear.
Saturday night I walked into the church as the harp, violin, and flute had just begun to play. The candles were lit, and the church was slowly filling up. I was surprised as an usher grabbed me from behind; he was none other than the gentleman from New York who had arranged our Carnegie Hall trip. He escorted me right down to the second row, where all of my Miami friends were already seated. As the church was not yet filledalthough it was certainly quiet enoughwe made quite a scene as they jumped up and engulfed me with generous hugs and kisses. And then Kathy, one of my travel buddies to New York, said “Oh dear! I’ve just gotten lipstick all over your gorgeous suit!” And sure enough, on the sleeve of my granny-smith-apple-green (the color for which my obsession for it should probably have me medicated) suit was a pale pink lipstick smudge. It was an Escada suit, bought at a consignment shop and, even at consignment prices, was not inexpensive.
She felt horrible about it. But what could I do?
No matter. I got to thinkingas I sat quietly in my pew listening to the strains of the harpabout the number of people who would gladly trade a lipstick smudge on an expensive suit for any one of those slobbery hugs I so enjoyed. I thought of folks sitting in other pews who might have recently lost their lover, their husband or wife, their child, their best friend, or their betrothed. How fabulous would a hug from them have felt that night?
How many times do weas mothersforego a hug from our little ones because strawberry jam is sticking to their fingers, or food remains on their tiny wet lips? Are we worried that we’ll get our new t-shirt dirty, that we’ll ruin the make-up we so carefully just applied to our freshly scrubbed face, or that the interruption of the hug will make us late to an appointment?
Perhaps I have gained perspective over the years. Call it rarely getting a hug from my sixteen-year-old son, or even from Cristina, for that matter. Call it worrying about my sixteen-year-old when he has almost exceeded curfew, and rejoicing when I hear the garage door screech up on its chain. Call it realizing with unhappy certainty that my eight-year-old’s goodnight squeezes will in the not-too-distant-future be a thing of the past.
So forget clothing. Forget your perfect make-up. You can always deal with dirt. That is, after all, why dry-cleaning was invented. Steal those hugs and kisses like there’s no tomorrow. And see how many moments you can add to life by the number of breaths it takes away.
